1 lb of all natural, pastured pork sausage (may be substitute for our ground beef)
1 small onion, chopped
2 cloves of garlic, minced
1/2 packet of Chili seasoning mix
1 1/2 cups of water
1 can or 1/2 bag of frozen, whole kernel, non-GMO corn
1 15 oz. can of organic diced tomatoes
1 green pepper, chopped
Raw shredded cheddar cheese
Dollap of Sour Cream
Mild Green Chilis
Serve with a side of Organic Tortilla Chips, a fresh Baguette with butter or freshly baked Corn Bread.
Cook the sausage with the onion, garlic and chili seasoning in a skillet until done, using a spatula to crumble and stir often.
CROCK POT COOKING: While those are cooking in the skillet, add the remaining ingredients into a crock pot an stir. Empty the cooked sausage mixture into the pot. Turn the crock pot on Low if you’d like to simmer all day. Turn it on High if you’d like the Chili to be ready within 1-3 hours.
QUICK COOK DIRECTIONS: Empty the cooked sausage mixture into the pot. For quicker cooking, make the Chili in a soup pan on the stove. Bring contents to a boil, then turn down to simmer for 15 min. Turn off and let stand for 10 min. Ladle into large soup bowls and serve with tortilla chips on the side and optional toppings.
